I used a spiralizer to make "pasta" out of zucchini and topped it with a shrimp scampi...I was skeptical but the darn thing actually works as advertised!
Recipe as follows...
2 Spiralized zucchini
3/4lb of jumbo shrimp
1 stick of butter
4 Tb EVOO
4 cloves of garlic thin sliced
2 shallots or 1/4 onion
1/2 cup white wine
1 lemon juiced
crushed red pepper
salt and black pepper
garnish parsley
Directions - follow the video duh!
NOTES:
I use 2-3 Tb of butter and 2 Tb of EVOO to sautee the garlicand onion. The remainder of the butter is used at the end to make the buerre blanc sauce and remainder of the EVOO to sautee the zucchini.
Heat should be Med-High for the garlic and onion...don't burn it! Turn the heat down to Medium low for the sauce. For the shriimp and zucchini, it should be HOT.
