science: how to slice steak and make cheap cuts tender with your knife

the way you slice steak can make all the difference heres whycook039s illustrated recipe for pan-seared flank steak with sriracha-lime butter: http:cooksio1n5c10mhere039s the best way to reheat steaks watch now: https:wwwyoutubecomwatchv=t4xixk-o1ycyou039ll love this tip on how to quickly defrost meat watch now:https:wwwyoutubecomwatchv=4a2hqpj6dxcwe know that its possible to make relatively tough cuts like flank steak more tender by thinly slicing them against the grainthat is perpendicular to the orientation of the muscle fibersrather than with the grain but how much more tender we decided to quantify just how much difference using the correct slicing method can makeexperimentwe cooked a whole flank steak in a temperature-controlled water bath to 130 degrees cut equally thick slices both with and against the grain and used an ultrasensitive piece of equipment called a ct3 texture analyzer from brookfield engineering to test how much force was required to bite into the slices we repeated the experiment three times and averaged the results we also duplicated the tests with a more tender piece of strip loinresultsflank steak slices carved against the grain required 383 grams of force to bite 5 millimeters into the meat while slices carved with the grain required a whopping 1729 grams of forcemore than four times as muchto travel the same distance strip loin slices carved against the grain required 329 grams of force with the grain 590 grams of forceexplanationflank steak contains wide muscle fibers and a relatively high proportion of connective tissue that make it chewy slicing it against the grain shortens those muscle fibers making it easier to chewtakeawayslicing against the grain dramatically narrowed the gap in tenderness between the strip and flank steaks flank steak sliced with the grain was 193 percent tougher than strip steak sliced with the grain but that difference dropped to just 16 percent when both types of steak were sliced against the grain so while all cuts benefit from slicing against the grain its especially important when slicing flank steak in fact slicing a flank steak properly can make it tender enough to rival premium steaksamerica039s test kitchen is a real 2500 square foot test kitchen located just outside of boston that is home to more than three dozen full-time cooks and product testers our mission is simple: to develop the absolute best recipes for all of your favorite foods to do this we test each recipe 30 40 sometimes as many as 70 times until we arrive at the combination of ingredients technique temperature cooking time and equipment that yields the best most-foolproof recipe each week the cast of america039s test kitchen brings the recipes testings and tastings from cook039s illustrated magazine to life on our public television series with more than 2 million viewers per episode we are the most-watched cooking show on public televisionhttp:wwwamericastestkitchencommore than 13 million home cooks rely on cook039s illustrated and cook039s country magazines to provide trusted recipes that work honest ratings of equipment and supermarket ingredients and kitchen tipshttp:wwwcooksillustratedcomhttp:wwwcookscountrycomfollow us:twitter: http:wwwtwittercomtestkitchenfacebook: http:wwwfacebookcomamericastestkitchen

autonomous tractor at work

the tractor pulling the grain cart in the video has no one in the cab it is controlled by an open source autopilot it can operate autonomously all day in the field without a driver i can039t take credit for every bit of hardware and software used but i did put it all togetherthanks to everyone who has put time and energy into pixhawk mavproxy mavlink droneapi missionplanner apm rover and all the great documentation that goes along with those i couldn039t have done it without you sorry if i missed anything or anyonein the video i mention that the tractor comes a little close to the combine and i attribute this to it being dusk time of day when gps often does funny things i am totally wrong about this being the cause of the problem it is a thing though i swath my fields with autosteer and i always set the direction either ew or ns east west in this case then when i get to the field with the combine i can use the autosteer on the combine to follow the swath because gps can vary a bit the combine has a feature called quotnudgequot basically if you see that the combine is drifting a bit you can nudge the autosteer right or left i didn039t have my combine set to exactly the same width as my swather so over the course of the day i kept nudging it in one direction as i moved across the field i clued in when i realized that i was having to move the grain cart the same amount away from the combine that the value of quotnudgequot had crept up too i can039t believe it but i checked and rechecked this behavior and it seems that when you use the nudge feature on the combine autosteer it adds some offset to the gps coordinates and then outputs the modified coordinates through the nmea serial connection which i feed into my laptop that ultimately determines where the cart will be relative to the combine now that i know this is how it works i can work around it but i think this has got to be a bug in the software in my combine the nmea serial output should be the unadulterated gps position at least in my opinion

110hp case steam tractor pull pinckneyville illinois august 15 2014

110hp case steam tractor pull pinckneyville illinois august 15 2014 do not worry about the fire hazard what you see is a very exaggerated amount of burning embers coming from the smokestack the sparks are created as a night spectacle for entertainment before this pull sawdust was added to the firebox to enhance the night quotspark showquot having said that back in the day there was always a risk of fire there was less of a risk during plowing season the highest risk was during harvest when the steam engines returned to the fields to thresh separate the grain from their stalks in typically dry fields weeks before the steam engines arrived the grain was cut and bundled by binders these mechanized machines looked the front of modern quotcombinesquot but binders only cut and a bound the grain the crops were cut close to the ground by the binder leaving the grain heads connected to the shaft these bundles were approximately 8quot in diameter and were about 3039 tall after the crops were cut these bundles were stacked in small piles called quotshocksquot these shocks contained maybe 7 to 12 bundles and scattered all over the field the shocks were left in the field until the grain was dry enough to separate the threshermen traveled from farm to farm to thresh each farmers grain most individual farmers could not afford a steam traction engine so the threshermen provided this service to the farmer on threshing day wagons were brought to the field and would load the shocks of grain and haul it to the threshing machine where it was placed quite a distance and upwind from the steam engine that provided the power for the machine to do its work the steam engine provided power to the threshing machine via an extremely long belt to keep any embers away from the dry chaff and straw that was separated from the grain the shock piles of crop were gathered as they were needed and not all gathered up and piled in one place at one time that way if there was a fire it would be small and contained to a small portion of the harvest and not all of it the steam engines were also outfitted spark arresters while threshing not to mention these steam engines required water so water was generally available should a fire break out also the steam engines would burn the straw which was waste from process of threshing the grainone day i hope to make a video of these separate processes that is now preformed by a single combine as for now if you watch the movie quotof mice and menquot with gary sinise and john malkovich you can see threshing in actioni have posted another video of it that includes three synchronized videos that were shot from three different angles that night one angle is shot from a drone flying high in the air that can be spotted above the engine towards the end of this video if you liked this video surely you would like that video even more http:youtube_8dh853fs_0god bless and thank you for watching
